Sindri Guðbrandur Sigurðsson, Chef of the Year 2023 and Sigurjón Bragi Geirsson, Iceland’s representative at the last Bocuse d’Or competition which is the most prestigious cooking competition in the world, will be guest chefs in jáland on Friday evening April 21 and Saturday evening April 22.
Those partners both work at the restaurant service Flóra, but they have both been among the leading chefs in the country in recent years and have played key roles in the national team of chefs. Sindri is today the team manager of the Icelandic national chef team and led it to the last World Championship in Luxembourg in 2022. Sindri finished in 2nd place in the competition Matreiðslumaður Norðurlanda last year.

Sigurjón was the coach of the Icelandic national chef team at the last Olympics in cooking and won the title Chef of the Year in 2019. They will offer a four-course menu with wine pairing. Diced char with truffle remoulade, pickled kohlrabi, dill aioli and sea urchin sauce. Diced duck thigh with gnocchi, Feykir cheese, oyster mushrooms and kale. Grilled beef tenderloin with mashed potatoes and confit potatoes, baked mushrooms with onion jam, green asparagus and port wine glaze. Chocolate brownie with curd and white chocolate mousse, cinnamon-caramel, pumpkin chutney and hawthorn sorbet.
There will be a lot of fun this evening, but the rapper Emmsjé Gauti comes to the area and enrages the crowd as only he can. It is the noble DJs Benni B Ruff and Steinar Fjeldsted who start the evening with sweet tunes that should go down very well with diners!
